Alexander’s Cookbook has been two years in the making. We tested and adapted every one of the 110 recipes, and wrote them for the experienced as well as the novice home chef. The home testing was meticulous, because the home cook uses very different methods when cooking for four people than I use when cooking for 50 or 100 people.

This collection of recipes represents the best possible balance of time-honored classics with dishes that reflect my need to keep things a little lively and surprising, for my customers’ sake as well as my own. You will note that many of the dishes have bright, upfront flavors and light demi glaces, with a splash of what pleases the current palate. While the foundation of my experience is classic French cuisine of the Escoffier tradition, my menus also embrace Asian, Caribbean, Latin, and Middle Eastern inspired dishes that fit well within the everyday tastes of most enthusiastic eaters.

The book follows the traditional courses of a meal, from appetizers all the way through to desserts, with a generous selection within each category. As I compiled the recipes I realized that the selection was broad enough for the home chef to find a recipe for almost any taste or occasion on a daily basis. That pleases me. I like the idea of this book becoming a good friend who hangs out at your kitchen counter, well-loved despite dog-eared and food and wine-stained pages.
